May also be called 'Thick Flank' but we think that our favourite roasting joint trully deserves the title of 'Top' Rump! The muscle works hard propelling our Dexters around the vast Ings but the texture is sublime and the taste divine. If you must adulterate the flavour we've worked years to develop, sit it on some Star Anise when you bung it in the oven.
