A slow roasting joint from the flank, previously situated next to the Short Rib Roast, containing ribs and a good covering of meat. Also known as Spare/Short Ribs or 'Jacob's Ladder', we tend to roast it and serve with green beans, mash and carrots, but you could cut to use as 'spare' ribs for a sticky barbecue marinade, if you think you're Jamie Oliver.
