Even on a Dexter the forerib is a formidable sized joint so we usually cut them into an equally beefy steak. Sitting neatly between the Chuck & Sirloin, this rack of six ribs, when taken off the bone, produce this popular steak. Tony made this fine example of a rare ribeye with hand cut chunky chips (although his had the bone in, so technically a rib Steak, but you can use your imagination).
