The recipe books may try to tell you that this tough cookie is the poor relation of the topside, requiring slower cooking or for making into corned beef, but we say throw those books in the [recycling] bin! It's worthy of it's silver side so show it some heat for an hour or so and enjoy roast beef, Yorkshire puddings (of course!), spuds roast & mashed, brussels, carrots and parsnips with onion gravy.
