Onglet, a name stolen from the French, translates as 'back steak'. For a more descriptive term the butchers of the US call this a 'hanger steak' - cut from the muscular part of the diaphragm of the animal and is an offaly good steak. Our Onglet is supplied whole, on the tendon.
The Onglet is full of flavour and, if served rare, extremely tender. However, if you prefer your steak well done, onglet is better braised slowly, and is versatile, adopting a range of seasonings equally well.
